Baked and slow cooked flavours. Buttery richness. A kitchen shaped by colonial history and home style traditions.

This time, we're looking at a different side of Sri Lankan cooking. Dutch and Portuguese influences settling into Lankan homes. Ovens instead of open flames. Curries that bake low and slow, meats that fall apart, sauces that cling to rice in a different way.

Chef Gayan and the crew are firing up the charcoal grill alongside the oven. Hoppers still coming off the pan, but this time, there's more.

Food will be served as a spread. Plates loaded at the pass. Eat what you like, go back for more.

On the bar: our red rice lager with Banks Brewing, plus a selection of wines. Cold ones for the heat, chilled glasses for the richness.

The fire pit will be glowing. A place to gather, share stories, and settle in while you taste your way through the menu. Good food, cold drinks, warm flames.

Music spinning all night. Good energy, good vibes.
